Ingredients:

  • 3 Diced Yellow Onions
  • 1  Cup Sliced Mushrooms
  • 1-3  tablespoons Dliced Garlic
  • 1 can Tomato paste
  • 1 28oz can Crushed Tomatoes
  • 1 28oz can Pureed Tomatoes
  • 2 28oz cans Diced Tomatoes
  • Emeril’s Italian seasoning or
  • Basil & Oregano to taste

Optional:

  • 1 Package Sweet Sausage
  • 1 dozen Meatballs(see Eileen’s recipe)
  • 2-3 pieces Braciole
  • 1/2 cup Diced Bell Pepper

In a large Dutch oven brown meats and set aside. Drain most of the fat off.  Add Bell  Pepper, garlic, onions, mushrooms and a little butter to the pot and sauté for a few minutes. Add the 4 – 28oz cans of tomatoes and the can of paste. Return the meats(if used) and add Italian seasoning. Simmer for 2 – 4 hours.
